    broccoli

    cloves garlic, minced

  • 20 g

    flour

  • 1.5 l

    chicken broth

  • 700 g

    heavy cream

  • 250 g

    cheddar cheese, shredded

  • 5 g
    salt

Method

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.

  2. Sprinkle the flour over the onions and stir to combine. Cook for 2 minutes, stirring constantly.

  3. Gradually pour in the chicken broth, stirring constantly, until the mixture is smooth.

  4. Add the broccoli florets and bring the mixture to a boil. Reduce the heat and simmer until the broccoli is tender, about 10 minutes.

  5. Remove the pot from the heat and puree the soup using an immersion blender or transfer to a blender and puree in batches.

  6. Return the pureed soup to the pot and stir in the heavy cream.

  7. Place the pot back over low heat and add the shredded cheddar cheese, stirring until the cheese is melted and the soup is smooth.

  8. Season the soup with salt and pepper to taste. Serve hot, bon appétit!

Notes

According to your preferences, add a few cooked potatoes for a thicker texture.
